Pistachia Vera is the edible variety of Pistachio grown in warm and dry climates around the world. The Pistachio tree is an evergreen native to Asia, and the very word traces the fruit's origin. The English word Pistachio comes from the old Italian word Pistaccio (Pistacchio in modern Italian), from the Greek Pistakion, which itself derives from an ancient Persian word.
Today Pistachios are cultivated in many areas around the world, however the Pistacchio di Bronte, a Sicilian variety produced near the Etna volcano, is widely recognized to be the most aromatic, intense and refined. The rugged and dry area around the small town of Bronte in Sicily produces pistachios which are long and thin and have a very deep shade of green. This rare delicacy, also known as the Green Gold of Sicily, is the Pistachio you find in our Gelato.
Curiosity: Pistachios tend toward biennial bearing, producing heavy crop one year followed by little or none the next. |
